History and types of Christmas cookies

Cookies as we know them today have their origins in medieval Europe, where spices such as ginger, cinnamon, and cloves began to be used in baking thanks to trade with the East. At that time, bakers created spiced cookies as a symbol of celebration, as the ingredients were very valuable and therefore reserved for special occasions.

Ginger, known for its digestive properties and warm flavor, was a key ingredient in many recipes. Early versions of gingerbread cookies were made as denser, less sweet bread than today’s. Over time, they evolved into the crunchy, sweet form we love so much today.

In Germany and Northern Europe, these cookies took on a decorative meaning. Bakers began to mold them into specific shapes: men, stars, trees, and even entire houses, such as the famous gingerbread houses inspired by the tale of Hansel and Gretel. This tradition spread to other countries, becoming a typical family activity at Christmas.

When it comes to variety, Christmas cookies go beyond gingerbread. There are classics like polvorones, Italian biscotti, Swedish pepparkakor (thin spice cookies), and festive buttery spritz. However, gingerbread cookies still hold a special place for their versatility: you can decorate them, use them as garnishes, or simply enjoy them with a cup of milk or, better yet, hot chocolate.

Preparation:

Prepare the dough:

  1. Sift the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt into a large bowl. Mix well to distribute the spices.
  2. In another bowl, beat the cannabis butter with the brown sugar until creamy.
  3. Add the egg, molasses, and vanilla extract, beating until well combined.
  4. Gradually add the dry ingredients, mixing until a homogeneous dough is formed. If the dough is very sticky, chill it in the refrigerator for 30 minutes.

  2. Use pastry bags or piping bags with a corner cut-off to decorate the cookies with Christmas motifs.
  3. Add sprinkles before the frosting dries.

Tips:

  • The dough can be prepared up to 2 days in advance and stored in the refrigerator.
  • For a crispier texture, bake the cookies for an additional 1-2 minutes.
  • If you are going to use them as decoration, make a hole in the top with a straw before baking, so you can hang them wherever you want.
  • Remember that cannabis consumed orally takes longer to take effect.
